Today I will tell you a Great Summer Squash Casserole Recipe you can easily make this recipe at home. Panzanella is a Tuscan bread salad that includes seasoned cubes of toasted bread, tossed in an olive oil vinaigrette dressing alongside with an assortment of raw vegetables. The concept is similar to the Middle Eastern fattoush salad which includes toasted pita bread.

Summer zucchini are some the easiest vegetables to grow if you want a crop that should be foolproof. Once your garden is going, you’ll learn why you need recipes for what to do with all of the summer squash it produces.

Ingredients

  • 2 pounds (7 cups) summer squash
  • 1/4 cup onion
  • 1 (10 3/3 ounces) can  cream of chicken soup
  • 1 cup carrot
  • 2 ounces butter
  • 2 cups herb-seasoned stuffing mix

Steps to Make It

Step 1

Cook the sliced squash and chopped onion in boiling salt water for 10 to 15 minutes. Drain well.

Step 2

Large bowl, combine the soup and sour cream. Stir in the shredded carrot and mix thoroughly.

Step 3

Fold in the well-drained squash and onion.

Step 4

In a microwave-safe bowl, melt the butter, erase from microwave, and toss with the stuffing mix.

Step 5

Spread partly of the stuffing in a 12-by-8-by-2-inch baking dish. Spoon vegetable batters on top. Sprinkle with remaining stuffing mixture.

Step 6

Bake at 350 F until heated through, about 30 to 35 minutes. Clear away it from the oven and serve the casserole hot.

Tips

You can quickly adapt this for the easy cooker. Half of the buttered stuffing mixture on the bottom of the slow cooker, top it with the vegetable and soup mixture with the other half of the stuffing mixture. Cover it, and cook on low for 7 to 8 hours.

Recipe Variations

Substitute great florets of cauliflower for the squash or combine it with the squash.

Winter squash can be acting, such as butternut squash. Use short cubes of peeled butternut squash in place of zucchini and yellow squash or in combination with them.

Add four strips of cooked and crumbled bacon to the vegetable batter.

Stir in 1 cup shredded cheddar cheese with the vegetable batter.

Mix in 1/3 cup sautéed chopped red bell pepper for color.

Adding in all three of these opportunities would make it super deluxe.
