  • 4 cups Dry Pinto Beans

  • 1 whole Ham Hock

  • 1 whole Onion, Diced

  • 2 whole Red Bell Peppers, Diced

  • 4 cloves Garlic, Minced

  • 2 whole Jalapenos, Sliced

  • 2 teaspoons Salt, More To Taste

  • 2 teaspoons Chili Powder (optional)

  • 2 teaspoons Black Pepper, More To Taste


  1. Rinse beans under cool water, sorting out any rocks/particles.
  2. Place beans in a stock pot with the ham hock and totally cover with water by 2-4 inches. Bring to a medium boil, then reduce to a simmer. Cover the pot and simmer for 2-3 hours, checking occasionally to make sure the water fully level is fine. And then Add more water as needed.
  3. Then throw in diced onion, add red bell pepper, add garlic, and jalapeno. Cover and continue your cooking for another hour or two or three remembering to check the water level.
  4. Add salt, add chili powder (if desired) and pepper, then cover and cook for another 30 to 35 minutes, or until beans are too lovely and tender. Serve with cornbread as a meal, or spoon on top of nacho, etc.

How to Make Spicy Beans

Here’s a  too simple a spicy variation made delicious with bell pepper and jalapenos. I made them a 2 weeks ago and we chowed down on them in one form or another for a few days. 

Rinse them in a colander under cool water.Pick through the beans and remove any debris that doesn’t belong.Throw ’em into a pot and cover with water by about two inches.
