- 1 cup panko breadcrumbs
- 2 cloves garlic, minced
- 2 Tbsp olive oil
- 1 brown onion, finely diced
- 1 courgette, grated
- 600g beef mince
- 1 clove garlic, minced
- 4 tsp Bolognese spice mix (1 tsp tomato powder, ½ tsp dried oregano, ½ tsp dried basil, ½ tsp onion powder, ½ tsp garlic powder, 2 tsp brown sugar)
- 1 x 400g can chopped tomatoes
- Balsamic vinegar
- 1 tsp salt
- 1 cup beef stock
- 100g baby spinach
- 400g dried spaghetti pasta
- 50g feta cheese, crumbled
Bring a medium pot of fresh salted water to the boil. Prep all ingredients.
Make pangrattato: Combine all pangrattato ingredients in a medium bowl. Add to a fry-pan on very low heat. Cook for 5-6 minutes, stirring, until golden. Return to bowl, then wipe pan clean.
Cook Bolognese: Heat a drizzle of oil in the same fry-pan, on high heat. Cook beef for about 5-7minutes, until browned. Add onion, courgette, garlic and Bolognese spice mix to the pan. Cook for 4-5 minutes, until veggies are tender.
When veggies are tender, add canned tomatoes, water, a drizzle of balsamic vinegar and salt. Reduce heat to medium and simmer for 5-6 minutes, stirring occasionally.
Cook pasta: Add spaghetti to the pot of boiling water and cook for about 12-14 minutes, until just tender. Stir occasionally to ensure strands don’t stick together. Drain, return to pot and drizzle with a small olive oil to prevent sticking.
Finish Bolognese: Stir spinach through Bolognese and season.
Serve spaghetti topped with beef Bolognese, feta cheese.
