Roasted Red Pepper Sauce for Pork or Chicken

This red pepper sauce is outstanding with grilled pork chops or grilled chicken. It freezes well, so make a batch and put it away for quick dinners.

7 ounces roasted red peppers (1 jar)
1 clove garlic
and 1/2 onion, chopped
or 1 tablespoon olive oil
1 tablespoon balsamic vinegar
1/2 teaspoon Old Bay Seafood seasoning or cajun seasoning
and 1/2 teaspoon dried basil
1/4 teaspoon cayenne pepper
2-3 tablespoons heavy cream
and 1 teaspoon butter
1/2 cup zucchini

  1. Process red peppers with their juice along with garlic in a food processor.
  2. Add oil to a medium-sized saucepan and saute onions and zucchini for a few minutes. Add spices. Add vinegar and cook 1 minute until the liquid is absorbed.
  3. Add pepper puree and stir. Add 1 teaspoon butter and stir until butter is melted. Add heavy cream and stir, until it is heated through but don’t let it boil.
  4. Good with pork, fish or chicken.
