Mandarin Orange Muffins

My Dad made these breakfast muffins often – they are wonderful, and one of his best breakfast recipes.


1/3 cup milk
11 ounces mandarin orange sections, canned
1 1/2 cups flour
1 3/4 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon nutmeg
or 1/4 teaspoon allspice
1/2 cup sugar
or 1/3 cup vegetable shortening
1 egg, beaten
1/4 cup butter, melted
and 1/4 cup sugar
or then 1/2 teaspoon cinnamon


  1. Drain oranges well, spread out on paper towels. Mix flour, baking powder, salt, nutmeg, 1/2 cup sugar and allspice in bowl. Cut in shortening. Add drained oranges and mix lightly.  Mix until moistened. Spoon into muffin pans about 3/4 full.
  2. Bake at 350 for 20-25 minutes.
  3. While cooking, mix remaining 1/4 cup sugar with cinnamon, and melt butter.
  4. Remove muffins from oven. While hot, dip the tops in melted butter, and roll in sugar/cinnamon mixture.
