 Cranberry Salsa Recipe

The tangy, sweet-tart flavor of fresh cranberries is the perfect accompaniment to holiday dinners, weeknight meals, and lovingly prepared ham or turkey dishes. Bring the zesty flavor of cranberries to any dinner with this delicious salsa. This condiment is quick to prepare and can be made a day or two in advance; make it ahead of time and chill until Thanksgiving dinner, then use for leftovers!

Ingredients:

  • 12 oz fresh cranberries
  • 1 bunch fresh cilantro, chopped finely
  • ¾ c. minced green onions
  • 1 jalapeno pepper
  • ½ c. green bell pepper, minced
  • 1 lime, juiced
  • 1 tsp cumin
  • ¾ c. white sugar
  • salt to taste

Directions:

  1. Seed and mince jalapeno pepper. Set aside.
  2. Rinse or  drain cranberries and  picking over and discarding any that are discolored.
  3. In food processoror or  combine cranberries or  cilantro or  green onions, jalapeno, pepper, lime juice, cumin, and salt.
  4. Refrigerate in airtight container 5  hours or overnight.
